Baked Soft White in Sourdough

Ingredients
- 1 Soft White
- 1 sourdough loaf
- 5 tbsp olive oil
- 4 garlic cloves
- 1 tsp chili flakes
- 1 pinch sea salt
- 1 tbsp fresh thyme
- 2 tbsp maple syrup
Instructions
- Preheat oven to 180°C and line a baking tray with parchment paper.
- Place the loaf on a board with the Soft White on top. Use a knife to cut a hole in the bread around the Soft White and make sure you cut deep enough but not all the way through the bottom.
- Remove the top and press the Soft White into the hole. Cut through the cheese in a criss cross pattern and slice through the edges of the bread. Try to pull the bread and cheese around the cuts you make to open them up a bit.
- Finely dice the garlic cloves. Mix the olive oil, garlic, chili flakes and sea salt in a bowl.
- Spread this over the cheese and bread, making sure to fill the crevices nicely.
- Sprinkle fresh thyme leaves and drizzle maple syrup on top.
- Tear the remaining pieces of bread into chunks and place these on the baking tray as well. Drizzle with olive oil and transfer the tray to the oven.
- Bake for 20-25 minutes, until the bread is golden and toasted. Serve with the extra croutons.

The Soft White is fermented and ripened traditionally, which makes it delicious to enjoy on a slice of bread, or in more sophisticated recipes!
