Tzatziki Falafel Sandwich

Ingredients

For the tzatziki:

  • 2 La Fraîche (360g)
  • ½ cucumber, grated
  • Handful fresh parsley, finely chopped
  • Handful fresh dill, finely chopped
  • Handful fresh mint, finely chopped
  • 1 garlic clove, minced
  • Juice from ½ lemon
  • Lemon zest
  • Pepper, to taste
  • Salt, to taste

 

For the falafel:

  • 250g chickpeas
  • 50g red onion, roughly chopped
  • 15g garlic cloves
  • 15g fresh parsley, chopped
  • 5g ground cumin
  • 5g salt, or to taste
  • 20-30g all-purpose flour or chickpea flour
  • Drizzle of olive oil

Instructions

For the tzatziki:

  1. In a mixing bowl, combine La Fraîche, grated cucumber, minced garlic, chopped parsley, dill, and mint.
  2. Squeeze the juice from half a lemon into the mixture and add lemon zest.
  3. Season with salt and pepper according to taste.
  4. Stir the ingredients until well combined.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to blend together.

 

For the falafel:

  1. Preheat your oven to 200°C.
  2. Start by draining the chickpeas and gently patting them dry with a paper towel.
  3. In a food processor, combine the chickpeas, red onion, garlic cloves, parsley, ground cumin, olive oil and salt.
  4. Pulse the mixture until it reaches a coarse paste consistency, occasionally scraping down the sides of the food processor as needed.
  5. Transfer the mixture to a bowl and gradually incorporate flour until the mixture is firm enough to shape into balls.
  6. Shape the chickpea mixture into small balls or patties.
  7. Place the formed falafel onto a baking sheet lined with parchment paper.
  8. Bake them in the preheated oven for about 20-30 minutes, or until they are golden brown and crisp.
  9. Once cooked, serve the falafel hot with tzatziki sauce, pita bread, and your preferred toppings!

 

Falafel Sandwich Idea:

  1. Warm pita bread in a toaster or oven until slightly soft.
  2. Spread a generous amount of tzatziki sauce inside the pita bread.
  3. Place a few falafel balls or patties into the pita.
  4. Add sliced tomatoes, cucumbers, and red onions on top of the falafel.
  5. Optionally, add hot sauce for extra heat.
  6. Fold the pita over the filling and enjoy!
