Ingredients

Recipe for a 20cm Φ cake tin

For the crust 

100g vegan cookies of choice

90g vegan butter

For the cream

400g La Fraîche

350g vegan white chocolate

100g cashew butter

75g plant-based milk of choice

For the topping

4 peaches

1 tbsp raw sugar

Instructions

  • Prepare the crust
      • Crush the cookies until they become fine crumbs. You can use a food processor or place them in a plastic bag and crush them with a rolling pin.
      • Combine with room temperature butter. Mix well until combined.
      • Press the mixture into the bottom of a lined cake tin, creating an even crust layer. Set it in the fridge.
  • Prepare the cream
      • Break the vegan white chocolate into small pieces. Melt it in the microwave or in a bain-marie.
      • Try your best to remove the excess liquid from the La Fraîche.
      • In a food processor, combine all the cream ingredients until smooth.
  • Assemble the cheesecake
      • Pour the cream mixture onto the prepared crust in the cake tin.
      • Cover the cake tin with plastic wrap and refrigerate it overnight to allow the cake to set and firm up.
  • Roast the caramelized peaches
      • Thinly slice peaches.
      • Heat a non-stick (grill) pan over medium heat.
      • Add the thinly sliced peaches to the pan.
      • Sprinkle the raw sugar evenly over the peaches in the pan.
      • Cook the peaches for about 4 minutes on each side, until they are caramelized and tender.
  • Top the cake
      • Once the caramelized peaches have cooled slightly, carefully arrange them on top of the chilled cream layer in the cake tin.
      • Feel free to create a decorative pattern or simply scatter them evenly across the cake. Here we topped it with blueberries and basil.
  • Serve
    • Carefully remove the cake from the tin.
    • To prevent the cake from sticking, gently run a knife along the sides and place it on a serving plate.
    • Slice the cake into portions and serve chilled.
