Ingredients
Recipe for a 20cm Φ cake tin
For the crust
100g vegan cookies of choice
90g vegan butter
For the cream
400g La Fraîche
350g vegan white chocolate
100g cashew butter
75g plant-based milk of choice
For the topping
4 peaches
1 tbsp raw sugar
Instructions
- Prepare the crust

- Crush the cookies until they become fine crumbs. You can use a food processor or place them in a plastic bag and crush them with a rolling pin.
- Combine with room temperature butter. Mix well until combined.
- Press the mixture into the bottom of a lined cake tin, creating an even crust layer. Set it in the fridge.

- Prepare the cream

- Break the vegan white chocolate into small pieces. Melt it in the microwave or in a bain-marie.
- Try your best to remove the excess liquid from the La Fraîche.
- In a food processor, combine all the cream ingredients until smooth.

- Assemble the cheesecake

- Pour the cream mixture onto the prepared crust in the cake tin.
- Cover the cake tin with plastic wrap and refrigerate it overnight to allow the cake to set and firm up.

- Roast the caramelized peaches

- Thinly slice peaches.
- Heat a non-stick (grill) pan over medium heat.
- Add the thinly sliced peaches to the pan.
- Sprinkle the raw sugar evenly over the peaches in the pan.
- Cook the peaches for about 4 minutes on each side, until they are caramelized and tender.

- Top the cake

- Once the caramelized peaches have cooled slightly, carefully arrange them on top of the chilled cream layer in the cake tin.
- Feel free to create a decorative pattern or simply scatter them evenly across the cake. Here we topped it with blueberries and basil.

- Serve

- Carefully remove the cake from the tin.
- To prevent the cake from sticking, gently run a knife along the sides and place it on a serving plate.
- Slice the cake into portions and serve chilled.
