Raclette, Potato and Leek Tart

A comforting tart with a golden, bubbling layer of raclette, resting on a savory bed of caramelized leeks, onions, and a mashed potato crust!

Ingredients

  • 1 pack La Raclette Vegan (flavor of your choice)
  • 500g medium potatoes, boiled
  • 3 tbsp olive oil
  • 2 leeks, thinly sliced
  • 1 white onion, thinly sliced
  • 2 Tbsp soy sauce
  • 1 Tbsp cane sugar

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a greased baking dish, mash the boiled potatoes evenly to form the base layer. Use the back of a glass or a flat surface.
  3. Heat olive oil in a skillet over medium heat and add the leeks and onions.
  4. Cook the leeks and onions until soft and then add the soy sauce and the sugar. Cook for a few more minutes.
  5. Spread the caramelised leek and onion mixture over the mashed potato base.
  6. Place La Raclette Vegan on the surface, spreading it evenly.
  7. Bake for 20 minutes, or until the top is bubbling and golden.
  8. Allow to cool slightly before serving. Enjoy!
