Raclette, Potato and Leek Tart

A comforting tart with a golden, bubbling layer of raclette, resting on a savory bed of caramelized leeks, onions, and a mashed potato crust!

Ingredients
- 1 pack La Raclette Vegan (flavor of your choice)
- 500g medium potatoes, boiled
- 3 tbsp olive oil
- 2 leeks, thinly sliced
- 1 white onion, thinly sliced
- 2 Tbsp soy sauce
- 1 Tbsp cane sugar
Instructions
- Preheat your oven to 200°C (400°F).
- In a greased baking dish, mash the boiled potatoes evenly to form the base layer. Use the back of a glass or a flat surface.
- Heat olive oil in a skillet over medium heat and add the leeks and onions.
- Cook the leeks and onions until soft and then add the soy sauce and the sugar. Cook for a few more minutes.
- Spread the caramelised leek and onion mixture over the mashed potato base.
- Place La Raclette Vegan on the surface, spreading it evenly.
- Bake for 20 minutes, or until the top is bubbling and golden.
- Allow to cool slightly before serving. Enjoy!
