What has the biggest environmental footprint, a vegan cheese or a cow milk cheese? We asked Eaternity, an independent organization that calculates the impact of thousands of foods.

Eaternity calculates the impact of thousands of foods according to 4 criteria: CO2, water, animal welfare, tropical forest. Eaternity has specifically studied our iconic product: the Soft White, a plant-based alternative to camembert made from cashew nuts.
The Soft White received 3 out of 3 stars in the CO2 category.
Let’s start at the beginning, to make cheese, you need milk. To make ours, we use cashew nuts. And cashew nuts are a raw material that requires few resources to grow in the wild. They do not need a lot of water, and they grow without any special care. Then they are transported by boat from the producing regions – Vietnam and Burkina Faso – to us. Transport by ship consumes half as much CO2 as air travel. The transformation in our creamery of these cashew nuts into milk and then into cheese is energy efficient as well. Our factory does not use fossil energy, we use hydraulic energy and reuse the energy that we produce continually. Eaternity has calculated that the production of our Soft White consumes 323 g of CO2: this is almost 3 times less than a Camembert made from Swiss cow’s milk.
Our Soft White received 3 stars in the animal welfare category
New Roots is a vegan company, which means that no animals are exploited in the creation of our products.
The Soft White also received 3 stars in the water category.
The organic farms that produce our cashews are not located in areas where water is scarce. Vietnam and Burkina Faso are water-abundant regions. In all, including the artisanal production of our Soft White, we only use 3L of water to make one cheese. It’s 40% less water than making a Swiss Camembert with cow’s milk.
Our Camembert alternative also got 3 stars in the rainforest category.
Eaternity takes into account two elements that contribute to the destruction of tropical forests: the presence of soy and palm oil. Our Soft White does not contain either of these two ingredients – nor any of our other products! Whereas in order to feed the cows, Switzerland imports millions of tons of soy.

Eaternity therefore gave us the highest possible score for our delicious Soft White: 3 stars out of 3 in each of the four categories. It is a matter of logic: it is more efficient to consume plants than to give them to an animal and then to consume the animal.
