Vegan Blanquette

A creamy and tasty blanquette like in our childhood days, but without animal suffering!

Ingredients
- 1 tablespoon olive oil
- 1 chopped onion
- 2 sliced carrots
- 200 g sliced button mushrooms
- 200 g vegan slices
- 1 teaspoon plain four
- 60 ml white wine
- 300 ml water
- 1 sprig of fresh rosemary
- 1 vegetable stock cube
- Black pepper
- 1 pinch of salt
- 1 La Fraîche
Instructions
- Saute the onion with the olive oil.
- Add the flour, stock cube, vegetables and vegan slices, herbs, water and wine
- and mix well/
- Lower the heat and cover. Simmer for 25 minutes, adding water from time to
- time.
- At the end of cooking, add the pepper, salt and vegetable cream.

Blanquette brings back memories of family meals, and I’m delighted to have been able to recreate it in a plant-based version!
