Sweet Potato Raclette Toast

Who says tradition and indulgence can’t also be plant-based and healthy? Mrs Flury reimagined the classic Swiss “Chässchnitte”, and it’s delicious!

Ingredients
- 2 sweet potatoes
- 1 tbsp olive oil
- 1 pear
- 2 figs
- 150 g smoked tofu
- La Raclette Vegan (Nature, Pepper, or Chili & Garlic)
- Fresh herbs: sage and rosemary
- Salt & pepper
Instructions
- Peel the sweet potatoes and slice them lengthwise into 1 cm thick slices. Brush with olive oil and bake at 180°C for about 20 minutes.
- Meanwhile, slice the pear, figs, and smoked tofu thinly.
- Remove the baked sweet potato slices from the oven and top them with your choice of toppings:
- Option 1: Pear slices + sage + La Raclette Nature
- Option 2: Fig slices + rosemary + La Raclette Pepper
- Option 3: Tofu slices + La Raclette Chili & Garlic
- Add about 2-3 tbsp of water to a pan, place the sweet potato slices in it, and cover with a lid. Cook on medium heat for 8-10 minutes until the cheese melts. Alternatively, broil in the oven for 5-6 minutes.
And just like that, you’ve created a heavenly, plant-based dish that’s healthy, light, and so incredibly tasty!
