Ingredients
- 4 apples (290g)
- 400g silken tofu
- 1 La Fraîche
- 7 Medjool dates (153g)
- 3g cinnamon
- 1 vanilla bean
- 40g starch
- 1g salt
- 50g oat flour
- 50g unsweetened applesauce
- 30g date sugar
- Pinch of salt
Instructions
- Remove the cores from the apples and either cook them until soft or bake them in the oven.
- Once soft, blend the apples together with the remaining filling ingredients until smooth and creamy.
- For the crust, mix all crust ingredients together and press into the bottom of a cake pan.
- Pour the cheesecake filling over the crust.
- Bake at 170°C (340°F) for 45–50 minutes.
- Let cool and finish with a dusting of cinnamon and a pinch of salt.
