Ingredients

  • 4 apples (290g)
  • 400g silken tofu
  • 1 La Fraîche
  • 7 Medjool dates (153g)
  • 3g cinnamon
  • 1 vanilla bean
  • 40g starch
  • 1g salt
  • 50g oat flour
  • 50g unsweetened applesauce
  • 30g date sugar
  • Pinch of salt

Instructions

  1. Remove the cores from the apples and either cook them until soft or bake them in the oven.
  2. Once soft, blend the apples together with the remaining filling ingredients until smooth and creamy.
  3. For the crust, mix all crust ingredients together and press into the bottom of a cake pan.
  4. Pour the cheesecake filling over the crust.
  5. Bake at 170°C (340°F) for 45–50 minutes.
  6. Let cool and finish with a dusting of cinnamon and a pinch of salt.
