A vegan Quiche Lorraine as good as the original? Yes, it is possible, all you have to do is follow this recipe!

Ingredients
- 1 shortcrust pastry
- 200 g La Fraîche
- 175 g vegetable bacon
- 200ml soy milk
- 2 tbsp. cornstarch
- 1 tbsp. chickpea flour (optional)
- Nutmeg, salt and pepper to taste
- Vegan grated cheese (optional)
Instructions
- In an oiled frying pan, sauté the bacon bits until golden. Set aside and preheat the oven to 200°C.
- Take the dough out of the fridge, roll it out and spread it into a pie form.
- In a large bowl, combine the soy milk, cornstarch, and chickpea flour. Add La Fraîche, salt, pepper and nutmeg.
- Add the bacon bits (and grated cheese, if you’d like some).
- Pour the mixture over the dough, smooth well with a spatula, and bake for 30 minutes. Remove from the oven and let cool before slicing.
I loved recreating this classic recipe in a vegan version, and the result is really spectacular!
