Ingredients
- 1 bag of organic tortilla chips
- 1 Mac’n’Sauce
- 1 small can of black beans (rinsed and drained)
- 1 avocado (diced)
- 1 small red onion (finely chopped)
- 1 tomato (diced)
- Fresh coriander or parsley (optional)
- Jalapeño slices (optional)
- Lime wedges (for serving)
Instructions
- Preheat the oven to 180°C (350°F).
- Spread tortilla chips on a large baking tray or oven-safe dish. Top with black beans, and half the chopped onion and tomato.
- Bake for 15 minutes, until warm and slightly crisp.
- Meanwhile, gently heat La Mac’n’Sauce in a small pan over medium heat. Stir regularly and don’t let it boil.
- Drizzle the warm Mac’n’Sauce evenly over the hot nachos.
- Add the remaining onion, tomato, avocado, jalapeños, and herbs.
- Finish with a squeeze of lime, and serve immediately. Enjoy!
