Loaded Vegan Nachos

Ingredients

  • 1 bag of organic tortilla chips
  • 1 Mac’n’Sauce 
  • 1 small can of black beans (rinsed and drained)
  • 1 avocado (diced)
  • 1 small red onion (finely chopped)
  • 1 tomato (diced)
  • Fresh coriander or parsley (optional)
  • Jalapeño slices (optional)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Spread tortilla chips on a large baking tray or oven-safe dish. Top with black beans, and half the chopped onion and tomato.
  3. Bake for 15 minutes, until warm and slightly crisp.
  4. Meanwhile, gently heat La Mac’n’Sauce in a small pan over medium heat. Stir regularly and don’t let it boil.
  5. Drizzle the warm Mac’n’Sauce evenly over the hot nachos.
  6. Add the remaining onion, tomato, avocado, jalapeños, and herbs.
  7. Finish with a squeeze of lime, and serve immediately. Enjoy!
