La Fraîche Brioche

An ultra-soft, golden, and fragrant brioche, enhanced by La Fraîche, for an irresistible treat!

Ingredients
- 500g flour
- 100g sugar
- 4g salt
- 250g La Fraîche
- 100g applesauce
- 20g fresh yeast
- 80g plant-based butter
- A little plant-based liquid cream for glazing
- Optional: cocoa powder or orange blossom water, to add to the dough before forming the balls
Instructions
- In the mixer bowl, mix the flour, sugar, salt, La Fraîche, applesauce, and yeast with the dough hook for 10 minutes on low speed. (For manual kneading, mix until the dough no longer sticks to your fingers.)
- Add the plant-based butter cut into cubes and knead again for 20 minutes on medium speed. (By hand, knead until the plant-based butter is well incorporated. The dough should be smooth and even.)
- Cover with a cloth and let rise for 2 hours in the bowl. The dough will double in volume.
- Deflate, fold in half, and cover with plastic wrap (to prevent the dough from drying out). Let it rest in the refrigerator ideally overnight so that all the flavors develop.
- The next day, deflate the dough. Make 5 balls (or 7 smaller ones) and place them in a 20 cm circle lined with parchment paper. Let rise for 1h15 to 1h30 at room temperature covered with a cloth.
- Preheat the oven to 180°C (350°F).
- Brush with plant-based liquid cream. At this point, you can add pearl sugar if you wish. Bake for 30 minutes.
- After removing from the oven, unmold and place the brioche on a rack. Enjoy!
