Cheesy Vegan Quesadillas

Golden, melty, and packed with flavour, these vegan quesadillas are cheesy comfort food with a spicy twist!

Ingredients

For vegetable mix:

  • 2 tbsp olive oil
  • 2 cloves garlic (finely chopped)
  • 1 onion (finely chopped)
  • 1 red pepper (finely chopped)
  • 1 yellow pepper (finely chopped)
  • 1 can black beans (cooked, 260 g)
  • 120 g sweetcorn (cooked)
  • 180 g sweet potato (roasted, diced)
  • 1 tsp ground chilli
  • ¼ tsp ground cumin

For quesadillas:

  • 4 large flour tortillas
  • 1 La Mac’n’Sauce
  • Fresh coriander (finely chopped, optional)

Instructions

  1. Heat olive oil in a large pan and fry onion, garlic, and peppers until softened.
  2. Add beans, sweetcorn, sweet potato, and spices. Cook until well combined, then set aside.
  3. In another pan, brush lightly with oil and place one tortilla.
  4. Spread 2–3 heaped tbsp of New Roots Mac’n’Sauce on top.
  5. Add a quarter of the veggie mix to one half of the tortilla, fold over, and cook until golden and toasted on both sides, with the sauce melted inside.
  6. Slice in half, sprinkle with coriander if using, and serve hot.
  7. Repeat with remaining tortillas. Enjoy!
