Cheesy Vegan Quesadillas

Ingredients
For vegetable mix:
- 2 tbsp olive oil
- 2 cloves garlic (finely chopped)
- 1 onion (finely chopped)
- 1 red pepper (finely chopped)
- 1 yellow pepper (finely chopped)
- 1 can black beans (cooked, 260 g)
- 120 g sweetcorn (cooked)
- 180 g sweet potato (roasted, diced)
- 1 tsp ground chilli
- ¼ tsp ground cumin
For quesadillas:
- 4 large flour tortillas
- 1 La Mac’n’Sauce
- Fresh coriander (finely chopped, optional)
Instructions
- Heat olive oil in a large pan and fry onion, garlic, and peppers until softened.
- Add beans, sweetcorn, sweet potato, and spices. Cook until well combined, then set aside.
- In another pan, brush lightly with oil and place one tortilla.
- Spread 2–3 heaped tbsp of New Roots Mac’n’Sauce on top.
- Add a quarter of the veggie mix to one half of the tortilla, fold over, and cook until golden and toasted on both sides, with the sauce melted inside.
- Slice in half, sprinkle with coriander if using, and serve hot.
- Repeat with remaining tortillas. Enjoy!
