Pistachio Tiramisu

This creamy pistachio tiramisu made with La Cotta is the ultimate show-stopping dessert for the holiday season (or anytime, really)!

Ingredients
Ladyfingers:
- 190 g all-purpose flour
- 15 g cornstarch
- 45 g coconut oil
- 130 ml aquafaba (water from a chickpea can)
- ¼ tsp baking soda
- ½ tsp baking powder
- 200 g xylitol or white sugar
- 1 tsp vanilla extract
- 240 ml brewed and cooled coffee
“Mascarpone”:
- 1x La Cotta
- 400 g silken tofu
- 30 g coconut oil
- 50 g xylitol or white sugar
- 1 tsp vanilla extract or seeds from 1 vanilla bean
- 50 gr pistachio cream or pistachio butter
Toppings:
- 15 g pistachio cream or butter
- 30 g crushed pistachios
Instructions
- Blend the silken tofu, La Cotta, coconut oil, xylitol, and vanilla until smooth.
- Divide the cream mixture in half. Add pistachio cream to one half of the mixture and mix until well combined. Set aside.
- Preheat your oven to 350°F (175°C).
- Whisk the aquafaba until foamy.
- In a separate bowl, mix the cornstarch, flour, baking powder, and baking soda.
- Gradually add 1 tbsp of sugar to the aquafaba and continue whipping until incorporated.
- Sift the dry flour mixture into the aquafaba and gently fold in until combined.
- Transfer the batter to a piping bag and pipe into ladyfinger shapes on a parchment-lined baking sheet.
- Bake for 12 minutes or until golden and set. Allow to cool completely before assembling.
- Soak the ladyfingers for a few seconds in the coffee.
- Layer the ladyfingers at the base of your serving dish.
- Spread a layer of plain ‘’mascarpone’’ cream over the ladyfingers.
- Add another layer of lady fingers.
- Add a layer of pistachio ‘’mascarpone’’ cream on top.
- Add extra pistachio cream or butter and sprinkle with chopped pistachios for garnish.
- Refrigerate overnight to allow the flavors to meld and the cream to thicken up.
