  • 200 g xylitol or white sugar
  • 1 tsp vanilla extract
  • 240 ml brewed and cooled coffee

“Mascarpone”:

  • 1x La Cotta
  • 400 g silken tofu
  • 30 g coconut oil
  • 50 g xylitol or white sugar
  • 1 tsp vanilla extract or seeds from 1 vanilla bean
  • 50 gr pistachio cream or pistachio butter

Toppings:

  • 15 g pistachio cream or butter
  • 30 g crushed pistachios

Instructions

  1. Blend the silken tofu, La Cotta, coconut oil, xylitol, and vanilla until smooth.
  2. Divide the cream mixture in half. Add pistachio cream to one half of the mixture and mix until well combined. Set aside.
  3. Preheat your oven to 350°F (175°C).
  4. Whisk the aquafaba until foamy.
  5. In a separate bowl, mix the cornstarch, flour, baking powder, and baking soda.
  6. Gradually add 1 tbsp of sugar to the aquafaba and continue whipping until incorporated.
  7. Sift the dry flour mixture into the aquafaba and gently fold in until combined.
  8. Transfer the batter to a piping bag and pipe into ladyfinger shapes on a parchment-lined baking sheet.
  9. Bake for 12 minutes or until golden and set. Allow to cool completely before assembling.
  10. Soak the ladyfingers for a few seconds in the coffee.
  11. Layer the ladyfingers at the base of your serving dish.
  12. Spread a layer of plain ‘’mascarpone’’ cream over the ladyfingers.
  13.  Add another layer of lady fingers.
  14. Add a layer of pistachio ‘’mascarpone’’ cream on top.
  15. Add extra pistachio cream or butter and sprinkle with chopped pistachios for garnish.
  16. Refrigerate overnight to allow the flavors to meld and the cream to thicken up.
  17. Enjoy this rich and creamy plant-based pistachio tiramisu!
