Fondue Spätzli

Ingredients

  • 125g flour
  • 7g ground flaxseeds (+ 22g water)
  • 120g water 
  • 4g salt 
  • Large pinch turmeric powder
  • Nutmeg
  • Pepper
  • Chives
  • 100g La Fondue Vegan
  • Olive oil

Instructions

  1. In a small bowl, mix the ground flaxseeds with the water. Let it sit for 5-10 minutes until it takes a gel-like consistency.
  2. In a large mixing bowl, combine the flour, salt, turmeric, nutmeg, and pepper.
  3. Add the flax egg to the dry ingredients.
  4. Gradually pour in the water while mixing until the batter is smooth and thick. It should have a slightly elastic texture.
  5. Bring a large pot of salted water to a boil. Add a drizzle of olive oil to the pot.
  6. Using a Spätzli maker or a colander with large holes, press the batter through into the boiling water.
  7. Cook the Spätzli until they float to the surface, which should take about 2-3 minutes.
  8. Use a slotted spoon to remove the Spätzli from the water and set them aside.
  9. In a pan, gently melt the La Fondue Vegan over low heat until creamy and smooth.
  10. Add the fondue to the Spätzli and combine until they are fully covered in fondue 
  11. Serve the Spätzli hot, garnished with extra chives if desired. Enjoy!
