Peach Panna Cotta

A fresh, light and scrumptious panna cotta with a delicate touch of peach!

Ingredients
- 1 La Fraîche (180g)
- 400 ml de lait d’amande
- 2 feuilles d’agar agar (=1 cuillère à café ou 2,5g)
- 30 g de sucre
- 8 g de sucre vanillé
- ½ cuillère à café de vanille en poudre
Pour le coulis de pêche
- 5 pêches
- 20 g de sucre
Instructions
- In a small saucepan, combine the almond milk, sugar, vanilla sugar, and agar agar sheet. (Be sure to read the instructions on your agar agar package, as different brands may have different usage instructions)
- Bring the mixture to a boil over medium heat, stirring constantly with a whisk. When it begins to boil, add the La Fraîche and continue to whisk well.
- Turn off the heat and remove the saucepan from the stove.
- Pour the mixture into a mold and refrigerate for at least 3 hours to set.
- While the panna cotta is setting, wash the peaches and roughly chop them into cubes.
- Blend half of the peaches until smooth. Combine the blended peaches and the remaining peach cubes with the sugar in a saucepan.
- Bring the peach mixture to a boil and cook for 5-10 minutes, until slightly thickened.
- Let the peach cream cool while the panna cotta sets in the fridge.
- When the panna cotta has set, serve it topped with the cooled peach cream.

If someone had told me that making a vegan panna cotta was this easy, I would have tried it ages ago!
