A rich, moist, flavorful king cake - the perfect way to celebrate the start of the new year!

Ingredients
- 2 vegan puff pastries
Frangipane:
- 250 g of almond meal
- 1 pinch of salt
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 100 g of melted coconut oil
- 120 g of icing sugar
- 1 jar of La Fraîche
- 1 fève (lucky charm)
Icing:
- 2 tbsp. tablespoon of vegetable milk
- 1 C. tablespoon of maple syrup
Instructions
- Mix almond meal, salt, almond, vanilla and coconut oil. Add La Fraîche and the icing sugar and mix gently.
- Unroll the puff pastries. In the center of one of them, spread the frangipane and place the fève.
- Cover with the second puff pastry and seal by pressing on the edges. Reserve 15 minutes in the freezer.
- Turn the galette over, and draw on the top with a knife. Make several small holes to let air escape, then spread the icing on top with a brush.
- Preheat the oven to 190°C and bake the galette for 20-25 minutes or until it turns golden brown.
